HERO CHEESE: Shilling

Our hero cheese for June is the wonderful Shilling by White Lake Cheese in Somerset.

One of the latest creations from relentless innovator and goat’s cheese superstar, Roger Longman, Shilling is a West Country take on Crottin - a Loire Valley classic.

As a small, lactic cheese, Shilling races through the aging process rather faster than some. When young, it’s dense and silky, with a sweetness from the goat’s milk and a mild tang. Tasting notes of macadamia, almond and mushroom become more prominent as the days and weeks go by, and Shilling can even be grated when aged until hard.
