Situated between Béziers and Agde, on the sunny terraces of the Languedoc, Domaine Preignes le Vieux, an exceptional property that has been making wines for five generations –family have been making wine here since 1905, with Jérôme Vic the current winemaker. In the heart of stunning Mediterranean landscapes, the site boasts a unique heritage, with Roman remains on the site and a stunning 13th century Chateau. Nowadays their wines embody both tradition and innovation.
The Paradis Rosé is made with 100% Grenache grown in volcanic, clay-gravel soils. All the grapes are handpicked and undergo rigorous selection prior to gentle pressing. The wine is vinified at a low temperature to preserve the fruit character. The resulting wine is bright, fresh and delicately-scented, with aromas that are reminiscent of crunchy red fruits.
The crisp acidity and the flavours that nod towards cranberry, pink grapefruit and redcurrant, work beautifully to balance the creaminess of the cheese. Alongside this, the minerality that supports the fruit character provides the perfect foil for the peppery, tangy nature of this goats cheese.
