Monte Schiavo Ruviano Verdicchio dei Castelli di Jes

This is a clean, fresh and delicate style of organic Verdicchio. Hailing from the Marche in Central Italy, legend has it that this wine was consumed by the army of the King of the Visigoths, to maintain their strength, as they marched on Rome. 

The fruit for this wine is sourced from Monte Schiavo's own vineyards and vinification takes place in stainless steel resulting in a crisp, lighter bodied wine, with notes of orchard fruits, fresh lemon and white flowers. These characteristics work perfectly with the Golden Saye, providing a subtle foil for the savoury, umami notes of the cheese, while bringing crispness and clarity to balance the caramel, nutty finish. The blanched almond notes on the finish of the wine layer perfectly with the finish of the cheese.
