Falanghina is an ancient Italian grape, believed to be of Greek origin. Records show that Falanghina was likely to be the grape variety behind Falernian, the most famous wine of Roman antiquity. Most Falanghina is grown in Campania, in southern Italy. The vines thrive in the porous volcanic soils around Mount Vesuvius and the warm Mediterranean climate.

There has been a renaissance of interest in Falanghina since the turn of the century, and there is now a movement to restore the reputation of this once-celebrate grape. Though it is increasingly fashionable, Falanghina isn't yet planted much outside Campania.

This wine hails from Guyot-trained and grow in limestone and clay soils at 300-400 metres altitude. Typically, it is harvested in the last half of September and fermented in steel at controlled temperatures, with no malolactic fermentation, to retain is fresh floral and fruit forward character.

Lifting the gentle, fresh creamy character of the cheese. The crisp acidity and mineral focus that support the fruit in the wine also balance the milky, soft texture of the mozzarella.
