This is not your average Pinot Grigio from the Veneto. It is a varietally true example of this often misunderstood grape. A member of the extended Pinot family of grape varieties, Pinot Gris (Grigio) is a pink-skinned mutation of Pinot Noir. The two grape varieties are indistinguishable in the vineyard right up until veraison.
‘Everyday’ Pinot Grigio is usually a light, fairly neutral wine, but premium examples achieve a weight and texture comparable to almost any Pinot Gris bottling from Alsace or New Zealand, but without any residual sweetness and still possessing the citrus tang and freshness associated with Northern Italy.
This zesty citrus energy and bright acidity in the Tavo mirror the citrus tang of the Wensleydale, while the smooth mouthfeel of the wine works beautifully with the yoghurt notes in the cheese. The glossy quality on the mid-palate of the wine, along with aromas and flavours that nod towards honeysuckle and white peach, provide a perfect foil for the crumbly texture and hints of buttermilk the run through this cheese.
